Rib Fajitas

So you cook up a ton of ribs, but at the end of the night you have leftovers? Really? After eating ribs?

Ok, it can happen. It happened to me after I made THESE RIBS. So what to do? I made Rib Fajitas.

LOTW Rib Fajitas:
Ingredients
  • bbq ribs
  • tortillas
  • onions
  • red pepper
  • lemon/lime juice
  • Cheez Whiz or shredded cheese
    AND/OR
  • sour cream
  • salsa
  • hot sauce
  • guacamole

INSTRUCTIONS:

  1. Cut meat from BBQ'd Ribs
  2. Chop onion, pepper
  3. Stir fry meat and veggies on relatively high heat, add few dashes of lemon juice
  4. Melt Cheez Whiz in microwave
  5. When veggies are to your liking, add them and rib meat to tortilla
  6. Add melted cheese, and any other condiment you wish
  7. Wrap, enjoy!

Two tortillas folded against each other to receive the stir fry mix and Cheez Whiz.

I also added Siracha hot sauce and a bit of ranch dressing.


It all comes together. Leftovers never tasted so good!

KINGSTON BREWING COMPANY Continued

Torpedo steak sandwich - doesn't it just look so good?


It's hard for me to resist a pickle on a menu. Delicious Kosher
style pickle - perfectly tart, juicy - the perfect vegetable side.


Grilled Dragon Wing with Ghetto Sauce - charbroiled - look at
those grill marks!




Fries on the side - freshcut. Some were slightly over cooked, but nothing
some malt vinegar and ketchup couldn't fix.


Of course, they also have Acadian Cajun Spice for you to
sprinkly on - what a great extra at your table!!!


Dessert was a 'Real Ale Pie' or a sugar pie - it was
ok, but surprisingly unsweet. Ice cream was good though.

Great little patio out front.
